I can't be the only one who thinks that potato wedges are different than fries, right? There's something about the thick-cut, crispy on the outside and fluffy on the inside potatoes that I can't resist. These air fryer spicy potato wedges are perfectly seasoned and ready in 20 minutes - you've got a perfect, easy side. There's no need to turn to the freezer section for potato wedges anymore! The best part, these are an easy air fryer side dish - No messy oil, and no turning on the oven!

Traditionally to get the perfect crispy exterior and fluffy interior on potatoes, you will find that people will recommend twice cooking the potatoes in oil. While that does give you the perfect potato, deep frying - and that too, twice - is kind of annoying. The air fryer is the perfect solution to this tedious process! Baked or fried, these potato wedges bring bar food / fast food home.

These potato wedges make the perfect side to our Italian stuffed sliders, or if you're feeling fancy, a perfectly seared ribeye steak!

A Note About Air Fryers

While air fryers are amazing, their power, sizes and cooking times vary greatly at times. This recipe is based on the air fryer that I use in my kitchen. Please note that cooking times may vary based on the specific brand that you use in your kitchen. For this reason, always keep an eye on your food while cooking. You may need to adjust cooking times up or down based on the brand you are using.

  • Olive oil
  • Seasoned salt
  • Cayenne pepper
  • Smoked paprika
  • Garlic powder

Instructions

START WITH...

Collecting all your ingredients - This will make cooking so much easier. Gather all the spices you will need, and keep them nearby. 

Cleaning and cutting your potatoes - Wash your potatoes, and cut them into wedges. The easiest way to do this is to cut the potatoes in half, and then in wedges from there.

Step by step instructions to prepare potato wedges
  1. Season the potatoes: In a mixing bowl, add the potato wedges, olive oil and seasonings. Toss well. Make sure all the wedges are evenly coated in olive oil and spices.
  2. Air fry: Transfer the potato wedges to the air fryer basket, and air fry between 15-20 minutes (depending on your desired crispness) at 390°F.
  3. Serve: Serve the potato wedges with your favourite dip. Try some ranch dip, avocado goddess or even basil feta dip!

Expert Tip

Shake your air fryer basket while cooking the wedges! This will give all the pieces a chance to brown and get crispy! As much as you can, try to evenly space out the wedges so that they are in a single layer. Overly crowded air fryer baskets will not give you the ideal crisp texture that you'd want for your wedges!

Substitutions

  • Russet potatoes - Try these with sweet potatoes instead!
  • Seasoned salt - If you can't find seasoned salt, feel free to use regular sea salt instead. Add a dash of onion powder and paprika to your sea salt to make your own seasoned salt.
  • Olive oil - Instead of olive oil, feel free to use avocado oil, or cooking spray if you want to keep it light.

Variations

  • Non-spicy - Substitute all smoked paprika instead of adding cayenne pepper to make these wedges mild.
  • Cheesy - Finish with some finely grated parmesan cheese for a cheesy twist! If you'd like, you can also toss the wedges in parmesan cheese before air frying them, for a cheesy crust on the potatoes.

This is what I used to make this recipe - Please be mindful that different equipment and cooking utensils may yield varying results. Most of my favourite equipment can be found on my storefront.

Storage

These potato wedges will stay in the fridge for 2-3 days. Store in an airtight container to keep them fresh.

To reheat, simply put them back in the air fryer. If you find that they are getting a little too much colour or too crispy, wrap them in foil to reheat.

FAQ

Which potato is best for wedges?

For the best texture, use a starchy potato like a russet potato. You will end up with a fluffy interior, and crisp exterior every time.

Can Potato wedges be frozen?

Potato wedges can be frozen! If frozen in an airtight bag or container, they can last in the freezer for up to 6 months. To reheat, put them back in the air fryer or even in the oven.

Why are my potato wedges not crispy?

Overcrowding the air fryer basket can be the number one culprit of soggy wedges. I highly suggest laying the wedges out in one even layer, even if that means making them in multiple batches. In addition, give the wedges a shake while cooking, so all sides get a chance to brown evenly!
