🥘Ingredients

  • Store-bought pizza dough: Using readymade pizza dough is the key to making this recipe quick and easy. You can use the bagged pizza dough in the deli section, defrosted, frozen pizza dough, or even prepared pizza dough from your local pizzeria.
  • Plain cream cheese: I recommend using full-fat cream cheese in these bagel bites, as it warms through and softens much better than lower-fat varieties.
  • Everything bagel seasoning: This is typically a blend of black and white sesame seeds, poppy seeds, granulated onion, granulated garlic, and salt. Luckily, you can find premade everything bagel spice in almost any grocery store, which is a great shortcut.

📖Substitutions

  • Pizza dough: You can opt for canned pizza dough, or even use biscuit or crescent roll dough. Another great option is to use frozen dinner rolls, which already have a light and fluffy texture.
  • Cream cheese: You can use any flavored cream cheese that you like, such as garlic and herb, or smoked salmon.
  • Everything bagel seasoning: If you don't love all of the elements of everything bagel seasoning, you can use all sesame seeds, poppy seeds, or granulated garlic.

 🔪Variations

  • Pizza bites: Instead of cream cheese, stuff these bagel bites with your favorite pizza elements like mozzarella cheese, pepperoni, or marinara sauce.
  • Sweet version: Fill pizza dough with peanut butter and jelly, and sprinkle lightly with coarse sugar for a sweet twist on these bites.
  • Add-ins: Add in your favorite flavorings like chopped scallions, cold cuts, or lox elements like capers, red onion, and smoked salmon.
  • Make your own dough: If you prefer, you can make your own dough using a 2-ingredient dough recipe. Use 1:1 parts self-rising flour and greek yogurt, and knead until smooth.

⏲️ Step-by-Step Instructions

Prep Work Before Cooking

Collecting all your ingredients: This will make cooking so much easier. Gather all the spices you will need, and keep them nearby. 

Bring pizza dough room temperature: Take the pizza dough out of the fridge 30-40 minutes prior to making the bagel balls. The pizza dough will be easier to handle and shape, and will have more stretch to it.

Place the pizza dough onto a flat surface, lined with parchment paper or sprinkled with all purpose flour, to avoid sticking.

Using a sharp knife or bench scraper, divide the pizza dough ball into 8 equal-sized portions. The easiest way to do this is to cut the dough ball in half, then the halves into half, and the quarters into half once again.

Using your palms, flatten the dough ball portion. Using your thumbs and index finger, stretch the disc of dough so that the outside of the disc is thinner than the centre of the disc.

Place one piece of cream cheese into the centre of the dough disc.

Bring up the edges of the dough to cover the cream cheese block, and pinch together so that the seams are closed. Roll the sealed ball between your palms to smooth out the bagel balls. This stuffing method is similar to the one I use in my buffalo pretzel bites, or cheese stuffed naan.

Add the everything bagel seasoning to a shallow bowl or plate. Press the top of the bagel bite ball into the everything bagel seasoning, and rotate to crust the top of the dough ball with seasoning.

Transfer the stuffed bagel bombs to a parchment lined air fryer basket. Air fry the bagel balls for 9-12 minutes at 390°F, until the tops are golden brown.

💭 Expert Tips

Take your time to spread the dough discs: It is important that you keep the centre of the discs thicker than the edges. this ensures that the top of the stuffed bagel bites do not rip, and the cream cheese does not ooze out. Keeping the edges thinner prevents big, doughy bites.

Use the oven instead: This recipe can be made in the oven too. Preheat the oven to 400°F, and bake the bagel balls for 12-15 minutes.

Keep an eye on the bagel bites: Air fryers often vary in time and temperature. Make sure you are checking the bagel bites regularly, as they can brown quickly.

🍽 Make Ahead & Storage

Allow cooked stuffed bagel bites to cool completely at room temperature. Once cooled, place the stuffed bagel bites in an airtight container or a resealable plastic bag, making sure to remove as much air as possible.

You can store prepared stuffed bagel bites in the refrigerator for up to 1 week. For longer storage times, freeze the stuffed bagel bites for up to 2-3 months.

Reheat in the oven or air fryer at 375°F for 10-15 minutes, depending if you are using an oven or air fryer. Heat until they are warmed through and the exterior is crisp.

You can also reheat stuffed bagel bites in the microwave for 20-30 seconds. This will give you softer bagel bites as opposed to a crisp texture.

How do I prevent the filling from leaking out during baking?

To prevent any leakage, make sure you seal the edges of the stuffed bagel bites securely when shaping them. Rolling the stuffed bagel balls in your hands after sealing them also helps to keep the dough together.

How can I get my bagel bites to have a shiny, golden-brown crust?

If you prefer a shiny crust, you can brush the bagel bites with an egg wash, which is an egg beaten with a splash of water, just before baking.

What can I do if my bagel bites are turning too brown on top during baking?

If you find that tops of your bagel bites getting too brown before the dough is cooked through, you can tent them loosely with aluminum foil while allowing them to finish cooking.
