🥘Ingredients
- Steak fries: Steak fries are a great frozen french fry option, as their thickness and width stand up to the vinaigrette and dressing well. They are the perfect balance between crisp exterior and light and fluffy interior.
- Lemon juice: I recommend using fresh lemon juice for the vinaigrette for bright, citrus notes.
- Dried oregano: Dried oregano is a traditional herb that you will find in many Greek dishes. It adds a slight pepper-y flavor, and pairs perfectly with the brightness of the lemon.
- Garlic cloves: I recommend using fresh garlic for a zesty and punchy flavor. Using a small amount will not be overpowering for such a large amount of dressing.
- Greek feta: I like to use Greek feta, which is made with a blend of sheep and goat's milk. It has a delicious tang and saltiness to it that you do not get from cow's milk feta.

📖Substitutions
- Frozen steak fries: Shoestring fries, frozen potato wedges, fresh potatoes, or homemade fries work if you have time.
- Lemon juice: While fresh lemon juice is ideal, bottled lemon juice will work in a pinch.
- Dried oregano: If you have fresh oregano, feel free to finely chop it and use it in place of dried. Fresh oregano leaves can be a little bit tough in texture, so I highly suggest mincing the fresh oregano finely if you are using it.
- Garlic cloves: Roasted garlic or garlic powder will be okay if you do not like fresh garlic.
- Greek feta: Use any feta that you have on hand, including crumbles if more convenient. You can even use vegan feta!
- Extra virgin olive oil: While a drizzle of olive oil is ideal, you can use avocado oil as well.

- Extra feta: Top with even more crumbled feta, for extra texture and feta flavor.
- Tzatziki: Instead of the chive feta dressing, drizzle with homemade garlic and dill tzatziki for a traditional Greek sauce idea.
- Spicy: Drizzle with your favorite hot sauce for some added spice to these fries.
⏲️ Step-by-Step Instructions
Prep Work Before Cooking
Collecting all your ingredients - This will make cooking so much easier. Gather all the spices you will need, and keep them nearby.
Prepare the produce - Finely chop the fresh tomatoes into even-sized pieces. I recommend de-seeding the tomatoes as well, so they do not make the fries soggy.
Place the frozen steak fries into the air fryer and spray them with cooking spray. Air fry the steak fries for 20 minutes, until golden brown and crispy. [photo 1]
To a mason jar or a measuring cup, add the ingredients for the lemon vinaigrette together, and whisk until combined. The vinaigrette will separate as it sits, as there is no emulsifier like mustard in it - this is completely normal.
Add the mayonnaise, sour cream, feta cheese, garlic and chives to a small blender container. Top with milk, and blend until completely smooth. If you find that your blender is getting stuck, add some more milk to the mixture to loosen it up - this is the same method as my basil feta dressing. [photo 2]
When the fries are cooked, spread them out on a parchment-lined baking sheet. Drizzle the fries with half of the vinaigrette, and toss the wedges while they are hot so they absorb the dressing better.
Top your fries with the creamy feta dressing, chopped tomatoes and olives, and drizzle with the remaining dressing and serve.
💭 Expert Tips
For the crispiest fries: You will want to give the air fryer basket a shake while the fries are cooking. This will allow the hot air to circulate around all of the fries and give them all an opportunity to crisp up.
For smaller air fryers: I recommend cooking the fries in batches. Overcrowding the air fryer basket will not give you the best results. Because potatoes cook so quickly in the air fryer, it will not add much extra cooking time.
🍽 Make Ahead & Storage
- If you’re wanting to make your own homemade fries or potato wedges for this recipe, you can make these at least 24 hours in advance to save you time. Crisp them up in the air fryer or oven when you are ready to assemble.
- The lemon vinaigrette can be made 1 week ahead, and stored in an airtight jar in the fridge.
- You can make the feta dressing 2-3 days in advance, and store in the fridge in an airtight container.
- I do not recommend storing leftover assembled fries, as they will not reheat well. These are best eaten fresh!

Absolutely - frozen french fries come out great in the oven. Preheat your oven to 400°F, and spread your french fries out in an even layer on a baking sheet. Spray with cooking spray, and bake until golden brown and crispy.
It is always recommended to salt your french fries when they are fresh out of the air fryer, oven, or deep fryer. This will add another layer of flavor to your fries, and the heat of the fries will help the salt stick. Instead of salt, this recipe drizzles the vinaigrette over the hot fries, which has the same effect!
