These crispy hasselback potatoes are loaded with great flavors, including seven spice, garlic, and paprika, then drizzled in a lemon tahini sauce with the perfect balance of nutty and tart. Yum!

Quick, Easy, Delicious: These potatoes may look intimidating, but they're actually super easy to make! They're buttery, garlicky, and full of yummy spices, making this recipe just as easy as it is delicious!

Vegetarian Friendly: This potatoes recipe is completely vegetarian and can easily be adapted into a vegan recipe with a vegan butter substitute.

Great for Meal-Prep: Wrap up each of your hasselback potatoes and store them in the fridge for a filling, easy lunch every day of the week!

🥘Ingredients

  • Russet potatoes: Russets have edible skin, light and fluffy interior, and a good balance of starchiness that'll hold up the hasselback cuts nicely. 
  • Seven spice: A mix of coriander, cumin, cinnamon, cloves, allspice, black pepper, and white pepper. It's generally available in the grocery store's international foods section or any middle-eastern grocery store.
  • Tahini: A sesame paste that adds a delicious, nutty flavor to the sauce and gives it a rich, luscious consistency.
  • Flat-leaf parsley: Flat-leaf parsley is grassier and more herbaceous than curly parsley. The earthiness of flat-leaf parsley pairs well with the nuttiness of tahini.

📖Substitutions

  • Russet potatoes - Yukon gold or redskin potatoes work just as well for this hasselback recipe!
  • Seven spice - Short on spices? Garam masala or shawarma spice are great alternatives offering a similar taste.
  • Salted butter - Use olive oil if you'd rather skip out on the butter. 
  • Flat-leaf parsley - If you don't have access to flat-leaf parsley, curly parsley or cilantro are other great options.

⏲️ Step-by-Step Instructions

Prep Work Before Cooking

Collecting all your ingredients - This will make cooking so much easier. Gather all the spices you will need, and keep them nearby. 

Prep the potatoes - Wash and dry the skin of the potatoes, to get rid of any dirt and to ensure the skin gets nice and crisp in the air fryer.

Cut the potatoes into slices - Place a chopstick or plastic/metal straw on either side of the potato. Using a sharp knife, cut slices into the potato without going all the way through it, stopping as your blade hits the chopsticks/straws.

Make your spice mixture - Add all your spices to a small bowl and mix until combined.

Season the potatoes - Brush potatoes with a quarter of the melted butter. Sprinkle half of the spice mixture onto the potatoes, and rub the seasoning into the potatoes' crevices, so the inside of the potatoes is well-seasoned.

Combine butter and spices - Transfer the remaining spice mixture into the bowl of remaining melted butter. Mix together until combined.

Cook the potatoes - Place potatoes in the air fryer basket, and air fry the potatoes for 30 minutes at 375°F. Occasionally baste the potatoes with the seasoned melted butter mixture. Leave a small amount of butter to finish the potatoes with once cooked.

Prep the sauce - While the potatoes are cooking, combine the ingredients for the tahini lemon sauce. You can use less or more water to thicken or thin the sauce to your liking. Taste the sauce for salt, and season to your taste.

Serve - Remove the cooked potatoes from the air fryer, and finish with the remaining melted butter mixture. Drizzle with tahini sauce, and serve!

💭 Expert TipS

Stir the tahini: Stir the tahini before using it as the liquid settles on the top. This will ensure you are getting the sesame paste from the bottom, instead of settled liquid/oil at the top.

Keep the potatoes moist with butter or oil: Keeping the skin well greased, it will help to prevent the dry spices from burning.

Do not forget to season the potatoes inside: Get into all of the cuts to avoid a bland potato, with seasoning only on the exterior.

What's great about air frying is that it makes reheating food super quick and easy, making for a meal you can prepare in a matter of minutes!

  • For meal prep or make ahead, make these hasselback potatoes in advance and refrigerate them until the day you're ready to serve them.
  • Cover your potatoes with foil or place them in an airtight container and store them in the refrigerator for up to 5 days.
  • When ready to eat, reheat them in the air fryer or oven for 5-7 minutes.

What is the hasselback technique?

The hasselback technique is a cooking method that involves slicing potatoes (or other foods) in thin, even layers without slicing them all the way through. 
 
The slices create a crevasse that can be stuffed or topped with additional ingredients or flavorings. It's essentially a way of creating more texture and surface area for flavor.

Why are they called hasselback potatoes?

The name "Hasselback" refers to a restaurant in Stockholm, Sweden called "Hasselbacken," where the hasselback potatoes were first introduced in the 1940s.

What's the easiest way to cut hasselback potatoes?

First, get a pair of chopsticks, wooden spoons, or metal/plastic drinking straws. Then place them on either side of your potato. 
 
Grab your knife and make your first cut at least half an inch from the end of your potato. Proceed to make cuts approximately ¼ inch apart, stopping when your blade hits the chopsticks so that the bottom of the potato is still connected.

How can you tell when your potatoes have gone bad?

Potatoes have gone bad when they're mushy, shriveled, or have large sprouts growing from them. 
 
They should be okay if your potatoes are a little soft or have small sprouts. You can easily remove the sprouts with a peeler or a knife.

Ingredients

  • 6 Russet potatoes peel-on, washed
  • ½ cup Salted butter 1 stick, melted
  • 1 teaspoon Seven spice
  • 1 ½ teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 2 teaspoon Sea salt
  • ½ cup Tahini
  • ½ cup Olive oil
  • 3 cloves Garlic finely minced
  • 1 Lemon juiced
  • ¼ cup Flat leaf parsley finely chopped
  • ¼ cup Water

Equipment

  • Mixing bowls
  • Air Fryer
  • Pastry brush

Instructions

  • Place a chopstick or plastic/metal straw on either side of the potato. Using a sharp knife, cut slices into the potato without going all the way through the potato.

  • Add the spices to a small mixing bowl, and combine to make a spice mixture.
