Why This Recipe Works
Tropical flavors: Between the coconut and pineapple, these tropical flavors pair together perfectly to create a sweet cocktail.
Perfect for hot weather: The frozen aspect of this drink makes it perfect to drink on a warm day. It’s refreshing and fun!
The right amount of boozy: While it may look like there are quite a few different liqueurs in this piña colada recipe, you definitely will not be overwhelmed by the flavor!
Ingredients
- Dark rum: Dark rum has been aged for a longer period of time. Dark rum has a more distinct flavor than light rum. So using this rum will add a more specific flavor.
- Malibu rum: Coconut flavored rum amplifies the coconut flavor in the drink and is used in most classic pina colada recipes.
- Bailey’s Irish Cream: The blend of irresistible Irish cream adds an additional creamy layer of flavor—with notes of vanilla and chocolate. This is a common ingredient in the standard recipe for pina coladas. Another great use for Bailey's is this Baileys Irish Cream Brownies recipe.
- Cream of coco: This adds the signature coconut flavor to a pina colada.
- Pineapple juice: When it comes to pineapple juice, you can use pineapple nectar as well.
- Frozen Pineapple: Using this frozen option is great way to replace ice cubes, for a smoother texture and more pineapple flavor.
A full list of ingredients with measurements is located on the recipe card, below.
Substitutions
- Light rum: If you don’t have dark rum, light rum works too.
- Malibu rum: Because there is already rum included, this addition is not absolutely necessary. You can omit it if you'd like.
- Rum cream: Instead of Bailey’s, you can try rum cream instead.
- Fresh pineapple & ice: If you don’t like frozen pineapple, you can use sweet juicy pineapple and ice instead for your delicious summertime cocktail! Either way, the flavor is as good as the bliss of sunshine!
Variations
- Vanilla ice cream: For a thicker drink similar to a milkshake, some opt to include a scoop of ice cream. It adds another element of flavor and sweetness too!
- Banana liqueur: Use this great liqueur if you’re looking for more notes of tropical fruit to pair with the pineapple flavors. Introducing this new flavor gives your cocktail a unique twist others might not expect!
- Slice of pineapple: Add a slide of pineapple on the rim for a fun flourish!
Step-by-Step Instructions
Prep Work Before Cooking
Collecting all your ingredients - This will make cooking so much easier. Gather all the spices you will need, and keep them nearby.
- Add all the ingredients to a blender.
- Blend the piña colada together on high power, until the fruit has broken down and the consistency is smooth.
- Serve the cocktails in tall glasses, and garnish with pineapple and fresh lime.
Expert Tip
To make thicker: If you like more of a chunky slushie and less of a smooth consistency, add in crushed ice to the blender. The frozen fruit will make a great, thick pina colada, but you will likely not have the same crystalline texture that you will get with ice.
To make kid friendly: Omit the alcohol. You may want to add some ice to give it more of a “mocktail” vibe, rather than a smoothie!
Make Ahead & Storage
Make Ahead Instructions
After making in a large pitcher without ice or frozen pineapple and store in the refrigerator until ready to make fresh!
Storing Leftovers
Store in an airtight container, and place in the freezer for up to one month! Remove 10-15 minutes before serving and blend again if necessary.
