Breakfast Quesadillas {Taco Bell Copycat}

These Taco Bell copycat breakfast quesadillas are a fantastic way to spice up boring breakfasts. Fluffy scrambled eggs, crisp bacon, and melty cheddar cheese make for a breakfast of champions. These quesadillas are freezer-friendly too, which means you can skip the drive-thru!

I just recently found out that Taco Bell has a breakfast menu - mind. blown. Taco Bell is disgustingly good, so naturally their breakfast options called to me.

Then it hit me - this breakfast quesadilla is easy to make at home. If you've been around here before, you know that I live for a good, lazy, freezer-friendly breakfast idea (think cream cheese bagel bites). Let's just say these breakfast quesadillas have also made the cut.

Ingredients

  • Large eggs
  • Bacon: To control the salt content of the quesadillas, I used lower sodium bacon. Use your favourite kind, though!
  • Cheddar cheese: I recommend shredding your own cheddar cheese, to get the best ooey-gooey melted cheese. Pre-shredded cheese is coated in anti-caking agents which sometimes prevents it from melting nicely.
  • Garlic salt
  • Louisiana hot sauce [not pictured]: Louisiana hot sauce adds the right amount of tang and spice to the eggs. Use your favourite hot sauce here, or leave it out if you prefer.
  • Milk [not pictured]: I like to use milk in my scrambled eggs to get a fluffier result. There are many methods to do this, including using half and half, heavy cream, or even water.
  • Flour tortillas: Flour tortillas tend to be a little less dry than corn tortillas, which make them ideal for these breakfast quesadillas. Choose your tortilla size according to how big you want your quesadillas.

Instructions

START WITH...

Collecting all your ingredients - This will make cooking so much easier. Gather all the spices you will need, and keep them nearby. 

Shredding the cheese - Shred your cheese using a box grater.

Cooking the bacon - If you have an air fryer, air fry your bacon for 10-12 minutes at 375°F. Alternatively, you can bake your bacon, or fry it in a frying pan until crisp. Drain, and cut into bite-sized pieces.

Step by step instructions to prepare taco bell breakfast quesadillas.

In a mixing bowl, whisk together the cracked eggs, milk, garlic salt and hot sauce.

In a skillet over medium-low heat, cook the scrambled eggs in cooking spray or butter, depending on your choice. Gently push the eggs back as they are cooking, to ensure well-cooked, fluffy eggs. Once the eggs have set, remove from the heat.

Lay down one flour tortilla flat. Add a thin layer of cheese. Top with half of the scrambled eggs, and half of the bacon. Top with another thin layer of cheese, and close the quesadilla with another flour tortilla. Repeat for the second quesadilla.

Spray a skillet with non-stick cooking spray, and cook the quesadillas over medium heat. Flip the quesadilla once the bottom has lightly browned. Cut into quarters, and enjoy!

Expert Tip

To keep this recipe lower carb, you can use one tortilla instead of two. Layer the ingredients onto one side of the tortilla, and fold it over! Cook the same way, and cut into quarters.

Substitutions

  • Bacon: You can use breakfast sausage in place of bacon, or even grilled chicken. You can leave the meat out entirely if you prefer.
  • Garlic salt: Season with salt, and garlic powder.
  • Cheddar cheese: You can use pepper jack, colby jack, or any cheese of your choice.

Variations

  • Vegetables: Add in your favourite vegetables, like black beans, bell peppers, etc.
  • Steak and eggs: If you have any leftover steak lying around, make this into a steak and eggs quesadilla instead!

Equipment

This is what I used to make this recipe - Please be mindful that different equipment and cooking utensils may yield varying results. Most of my favourite equipment can be found on my storefront.

Storage

You can make these quesadillas ahead of time, and keep them wrapped in foil in the fridge for 2-3 days. Reheat in a frying pan to crisp up the tortillas.

Alternatively, you can make a larger batch of these quesadillas and freeze them. To reheat, either put them in the oven wrapped in foil, or put them in a frying pan with a splash of water and the lid on.
