- Olive oil: Feel free to use an oil of your choice. Avocado oil is another great option.
- Salt and pepper: You can leave the salt and pepper off, to keep the garlic plain and simple. I recommend doing this if you are batch-making roasted garlic to use in different recipes.

- Spicy: Sprinkle red chili flakes or spread Calabrian chili paste over the garlic heads before wrapping and roasting.
- Herbs: Add fresh thyme, rosemary, or oregano to the foil packets for an earthy, herby twist to classic roasted garlic.
- Sweet: Top the garlic bulbs with a drizzle of honey to make sweet, honey-roasted roasted garlic.
Step-by-Step Instructions
Prep Work Before Cooking
Collecting all ingredients: This will make cooking so much easier. Gather all the spices you will need, and keep them nearby.
Cut foil: Cut a large piece of foil. The piece should be large enough to hold 2 heads of garlic, and to fold up into a pouch.
Prep the Garlic
With a sharp knife, cut the top of the garlic head off to expose the individual cloves.
Season the Garlic
Place both heads of garlic onto the sheet of foil. Drizzle with olive oil, and season with salt and pepper.
Bring the edges of the foil up and close the foil into a pouch/packet.
Roast the Garlic
Place the pouch in the air fryer, and roast for 1 hour at 375°F.
Let the garlic cool to room temperature, and squeeze the cloves out of the skin to use.
Expert Tips
Close the foil firmly: Seal the foil pouch tightly to trap the steam inside. This will keep the garlic cloves soft, instead of hard and burnt.
Easy way to remove cloves: Place a head of garlic between the two metal arms of kitchen tongs and squeeze the head of garlic together. This will squeeze the roasted garlic cloves out easily.
Make Ahead & Storage
- Roasted garlic can be made and refrigerated in an airtight container for up to 2 weeks.
- You can store the heads of garlic intact, or make a paste out of the roasted garlic cloves.
- Fill ice cube trays with roasted garlic puree, and freeze. Remove the cubes from the tray, and store them in a freezer bag for 2-3 months in the fridge. Use the frozen garlic as needed.

I looooove me my roasted garlic. This was a very easy way to make roasted garlic. I made a larger batch, and stored the paste in my fridge. YUM!!

Hi Jane,
You can try to wrap the garlic in parchment paper as well. The main goal is to create a little package to accumulate steam, which helps to soften the garlic. Let me know if that works!
