Ingredient Notes
- Ground mustard: Ground mustard is sometimes labelled as mustard powder in the spice aisle. I use regular ground mustard for this recipe, not "hot" or "spicy" mustard powder that you can sometimes find.
- Soy sauce: You will need regular light soy sauce for this sauce. Light soy sauce is the most commonly found variety in most grocery stores. If it does not say "dark" soy sauce on the label, chances are it is light soy sauce.
- Fresh garlic: Fresh garlic is key for this dipping sauce, since it does not get cooked down. Jarred garlic has a slightly acidic, muted flavor that does not taste great when it is raw.
- Heavy cream: Sometimes labelled as whipping cream. Look for something with 35% fat.

Substitutions
- Ground mustard: You can use hot/spicy mustard powder if that is what you have. You may want to use significantly less to avoid overpowering the sauce.
- Soy sauce: Feel free to substitute with coconut aminos, liquid aminos if you do not eat soy.
- Fresh garlic: For a mellow flavor, substitute fresh garlic with garlic powder.
- Heavy cream: Substitute with half and half cream or whole milk. The sauce will not be as rich as it would be with heavy cream.
Variations
- Sweet and spicy: Add a touch of honey or brown sugar to the dipping sauce for a "honey mustard" twist on Benihana's dipping sauce.
- Fresh herbs: Add some freshly chopped cilantro or green onions to the finished dipping sauce for some added brightness.
- Ginger: Make a hybrid of Benihana's mustard dipping sauce and ginger dressing, by adding some freshly grated ginger to this recipe.

Prep Work Before Cooking
Collecting all ingredients: This will make cooking so much easier. Gather all the spices you will need, and keep them nearby.
Mince garlic: Finely mince the garlic cloves using a garlic press or sharp knife.
Dissolve Ground Mustard
Add the ground mustard, water, and soy sauce to a jar or a measuring cup. Stir well to dissolve the ground mustard, until there are no visible clumps.
Finish the Sauce
Add the minced garlic, heavy cream, and sesame seeds to the mustard mixture. Stir well to combine. Store in the frige until you're ready to serve, or serve right away!
Expert Tips
Adjust the mustard: Start with less mustard powder, and add more to your taste. Ground mustard can get overly spicy and overpowering, so if you prefer a milder, mellow flavor, less is best.
For a thicker sauce: If you prefer a thicker dipping sauce, add a few spoons of mayonnaise or sour cream to the mixture.
Watch the salt: Soy sauce typically adds more than enough salt to this sauce, so you will not need to add any additional. As always, give the sauce a taste and adjust to your liking.
Make Ahead & Storage
- You can prepare this sauce 3-4 days ahead of time. Store the sauce in an airtight jar or container in the fridge.
- Leftover sauce can be stored the same way.
