Flavour: This flatbread is the perfect mix of flavour. Sweet barbecue sauce, spicy jalapeños, herbaceous ranch, and creamy avocado all play well together on this flatbread. Every bite is packed with flavour! No one flavour is overpowering on this flatbread.
Ease: The hardest part of this recipe is stretching the pizza dough. I know it sounds funny, but I often struggle with it. Once you get past that, all that's left is to layer the ingredients and bake it off.
Time: This flatbread takes 30 minutes to make. This includes the time it takes to stretch the pizza dough.
Ingredients and Substitutions
Pizza dough: If you have a tried and true homemade pizza dough recipe, feel free to use it here. I personally went with a store-bought pizza dough. Many local pizzerias offer their doughs for sale as well. If you are not completely comfortable with stretching or rolling out the dough, that's fine! You may purchase pre-baked flatbreads from the bakery section of your grocery store. They are usually just as good, and take a fraction of the effort!
Rotisserie Chicken: Rotisserie chicken is the easiest protein to use for this pizza. You can alternatively poach fresh chicken breasts and shred them yourself if you prefer.
Jalapeño peppers: I used fresh jalapeño peppers on this flatbread. If you prefer the sourness of pickled jalapeños, you can use those instead.

- Preheating your oven - You will want a hot oven preheated to 375°F. The oven should be waiting for you, not the other way around.
- Prep your ingredients - Peel and finely slice your red onions. Wash and thinly slice the jalapeño pepper, if you are using fresh jalapeño. Using a box grater or a food processor with a grater blade, freshly grate the cheeses.
- Stretch the dough: On an oiled baking sheet, stretch the pizza dough into a long oval shape. You can also stretch it to completely fill a rectangular baking sheet if you wish. However, if it is easier for you, you can also use a rolling pin to roll the rough out.
- Par-bake the flatbread dough: Par-bake the dough until it has set and solidified, but is not yet brown. This should take 5-7 minutes.
- Add your toppings: Top the flatbread with barbecue sauce as the base, then with cheese, shredded chicken, red onion and jalapeño slices. Bake for another 10-15 minutes until the crust is golden brown, and the cheese is browned.
- Finish: Drizzle with homemade ranch or your favourite store-bought variety, and add sliced avocado.
Expert Tip
When working with fresh pizza dough it is best to use a thoroughly floured surface. Dust your work surface with flour (or even corn meal for a nice crust) as well as your rolling pin if you are using one. It makes a world of difference, and will make sure the dough does not stick!
