Recipe Overview

  • Flavour: The shredded chicken is the perfect mix of tangy salsa, with some spicy smokiness from chipotle chili powder.  The Bush’s® Southwest Style Pinto Beans add another layer of spice and smokiness, as they are simmered in a chilli sauce with jalapenos. You can really turn bean goodness into meal greatness with these Bush’s® Beans! A drizzle of sour cream adds just the right amount of creamy contrast, making these a flavour explosion!
  • Ease: These tacos are easy. Shredded rotisserie chicken is the base of the chicken filling, which requires no work on your end. With a few add-ins, this filling takes no time or fancy cooking techniques to make.  
  • Time: These tacos can be on your table in 10 minutes!

Ingredients

  • Shredded chicken breast: To make this recipe really easy, you can use shredded rotisserie chicken breasts. If you prefer to make homemade shredded chicken, I find it easiest to poach the chicken in chicken broth with some garlic powder and salt. You will want to use two forks to shred the chicken into long strips. If you find white meat to be dry, or you are simply a fan of dark meat, chicken thighs will work great! 
  • Store-bought salsa:  Salsa is so much more than a nacho condiment. It is a great addition to ground beef for tacos, or in this case, our shredded chicken. This is a great opportunity to add some spice, by using hot salsa if you like the heat. Of course, the spice can be turned down by using a mild salsa as well.  
  • Spices and seasonings: You will need garlic powder, onion powder, and chipotle chilli powder to season up the filling. 
  • Bush’s®Southwestern Style Pinto Beans: To complete these shredded chicken tacos with a complete flavour explosion, these tacos are topped with delicious Bush’s® Southwestern Style Pinto Beans. Bush’s® Beans have the most amazing depth of flavour, with premium quality ingredients, so you can really taste the difference in every bite. The sauce of the beans plays well with the Tex-Mex flavours of the shredded chicken, making these tacos super flavourful!

Instructions

Step by step instructions to prepare tacos
  1. Prepare the filling: In a pan over medium heat, add the shredded chicken, salsa, and spices. Cook through until heated.
  2. Heat the beans and tortillas: While the chicken filling is heating through, warm the Bush’s® Beans in a saucepan on the stove over medium-low heat. Warm the tortillas on the stove as well. 
  3. Serve: Serve the tacos by adding some shredded chicken, Bush’s® Southwestern Style Pinto Beans, shredded lettuce, pickled red onions, and sour cream. Enjoy!

Expert Tip

Make sure to include the sauce from the Bush’s® Beans! The sauce is full of flavour, and compliments the chicken filling perfectly.
