Ingredients

  • ¼ cup Olive oil light
  • 2 tablespoon White wine vinegar
  • ¼ cup Mayonnaise
  • ½ Lemon juiced
  • 3 tablespoon Parmesan cheese
  • 2 cloves Garlic
  • ½ teaspoon Garlic Powder
  • ¾ teaspoon Italian seasoning
  • 2 tablespoon Water
  • Salt to taste
  • Black pepper to taste

Instructions

  • In a food processor, add mayonnaise, vinegar, lemon juice, and oil. Add the garlic powder, fresh garlic, Italian seasoning, sugar, salt, pepper, and parmesan.
    ¼ cup Olive oil, 2 tablespoon White wine vinegar, ¼ cup Mayonnaise, ½ Lemon, 3 tablespoon Parmesan cheese, 2 cloves Garlic, ½ teaspoon Garlic Powder, ¾ teaspoon Italian seasoning, 2 tablespoon Water, Salt, Black pepper
  • Pulse the dressing until creamy and emulsified. Taste for seasoning, and adjust if needed.

Notes

Use real parmesan: Freshly grated parmesan gives better texture and flavor. Look for a stamped rind or authenticity seal when purchasing.
Balance acidity: Adjust vinegar, lemon, and sugar to your taste. 
Adjust seasoning: Parmesan and mayonnaise are naturally salty. Taste the dressing once blended, and salt according to your taste. 
Let it rest: The flavors will meld and deepen after chilling the dressing. For best results, refrigerate the dressing for 30-60 minutes.
Shake before serving: Some separation is normal as the dressing sits.
