- 1 lb Rigatoni pasta
- 6 slices Thick-cut bacon lardons
- 1 Red onion finely diced
- 4 cloves Garlic minced
- ⅓ cup Tomato paste
- ½ tablespoon Italian seasoning blend
- ½ tablespoon Red chilli flakes or less to taste
- ½ cup Heavy cream
- 1 cup Pasta water divided
Bring a large pot of water to a boil. Salt the water liberally once the water is rapidly boiling.
Boil the rigatoni pasta in boiling, salted water until al dente. Drain the pasta once cooked, and set aside.
1 lb Rigatoni pasta
Add the bacon lardons to a cold large skillet. Turn the heat to medium, and let the bacon fat render out. Once the bacon is almost completely crisp, drain off 90% of the bacon fat, and add the onions and garlic. Sweat the onions and garlic until translucent.
6 slices Thick-cut bacon, 1 Red onion, 4 cloves Garlic
Once the onions have softened, add the tomato paste and spices to the skillet. Mix the tomato paste into the onions and bacon, and let the tomato paste cook through for 2 minutes until the oils start to release.
⅓ cup Tomato paste, ½ tablespoon Italian seasoning blend, ½ tablespoon Red chilli flakes
Turn the heat to low, and add the heavy cream to the skillet. Combine the sauce together, and add half of the pasta cooking water to loosen the consistency.
½ cup Heavy cream, 1 cup Pasta water
Add the pasta to the skillet, and toss. Add the remaining pasta water while tossing the pasta with the sauce, and serve.
1 cup Pasta water
- To cut the bacon easily: Cut the bacon while it is still cold out of the fridge. This will make cutting the lardons (matchsticks) much easier, and the fat will stay solid!
- Do not rush the tomato paste: Give the tomato paste enough time to cook through. This will give your sauce a good depth of flavor, without tasting like metallic, raw tomatoes.
