Ingredients

For the Chicken

For the Sauce

  • 2 Small shallots finely minced
  • 3 cloves Garlic minced
  • ½ cup Dry white wine I used Chardonnay
  • 1 cup Chicken broth
  • 1 tablespoon Grainy mustard
  • 1 tablespoon Spicy pub mustard
  • ¼ cup Heavy cream

Instructions

  • Season the Chicken: Mix together the dried spices. Season the chicken cutlets liberally on both sides with the seasoning mix.
  • Sear the Chicken: On medium heat, in a cast iron skillet lightly coated with extra virgin olive oil, sear the chicken cutlets for 5 minutes per side. Once the chicken breasts are browned, remove from the pan and set aside.
  • Saute the Shallots and Garlic: Add the shallots and garlic to the same cast iron skillet that you seared the chicken in. Lower the heat to medium-low. Saute until they are fragrant, and the shallots are translucent.
  • De-glaze with Wine: Add the white wine to the pan. Make sure you are scraping up the brown bits off the pan. Let the wine reduce down by half, which should take between 3-5 minutes.
  • Add the Chicken Broth and Mustard: Add the chicken broth and the mustard to the skillet, and combine. You may find it easier to use a whisk to combine the mustard, so it is smooth.
  • Finish with Cream, and Add Chicken Back: Finish the sauce with cream, and add the chicken back to the skillet, nestled in the sauce.
