Air Fryer Chipotle Lime Chicken {Qdoba Copycat}

If you are a fan of that flavourful fast food tex-mex chicken, then this recipe is for you! This air fryer chipotle lime chicken is a Qdoba copycat recipe, that makes for great, tasty meal prep. With smokey chipotles, tangy lime, and sweet honey, this chicken is anything but boring. The best part is that it cooks up in ten minutes in the air fryer!

Ingredients

  • 4 Chicken breasts boneless, skinless
  • 2 tablespoon Honey
  • 1 6.55 oz can Chipotles in adobo
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 tablespoon Adobo seasoning
  • 2 teaspoon Sea salt
  • 1 Lime zested, juiced
  • cup Olive oil

Instructions

  • Mash the ingredients: In a large mixing bowl, add the chipotle peppers, honey, lime juice and zest, and seasoning. Using a whisk, mash the chipotle peppers down so they are broken up into smaller pieces.
    2 tablespoon Honey, 1 6.55 oz can Chipotles in adobo, 1 tablespoon Garlic powder, 1 tablespoon Onion powder, 1 tablespoon Adobo seasoning, 2 teaspoon Sea salt, 1 Lime
  • Finish the marinade: Add the olive oil to the mixture, and combine well with a whisk.
    ⅓ cup Olive oil
  • Marinate the chicken: Add the chicken to the marinade, and let it sit for at least 30 minutes, and up to 24 hours.
    4 Chicken breasts
  • Air fry: Add the chicken to an air fryer basket, and air fry for 10-12 minutes at 375°F.

Notes

Halve the chicken breasts - If you are using thicker chicken breasts, I recommend halving them so you get two thinner chicken pieces, that will cook faster. Alternatively, you can pound them with a meat mallet.
