Loaded Greek Feta Fries

Ingredients

  • 28 oz bag Frozen steak fries

For the Vinaigrette

For the Feta Dressing

  • 2 cloves Garlic minced
  • 1 cup Greek feta crumbled
  • ¼ cup Sour cream
  • ¼ cup Mayonnaise
  • ¼ cup Whole milk adjust to your desired consistency
  • 1 tablespoon Dried chives

For the Toppings

  • 1 Roma tomato deseeded and finely diced
  • ¼ cup Black olives sliced

Instructions

  • Place the frozen steak fries into the air fryer and spray them with cooking spray. Air fry the steak fries for 20 minutes, until golden brown and crispy.

  • To a mason jar or a measuring cup, add the ingredients for the lemon vinaigrette together, and whisk until combined.
    ¼ cup Extra virgin olive oil, 1 Lemon, ½ teaspoon Dried oregano, 1 teaspoon Sea salt
  • Add the mayonnaise, sour cream, feta cheese, garlic and chives to a small blender container. Top with milk, and blend until completely smooth. If you find that your blender is getting stuck, add some more milk to the mixture to loosen it up.

  • When the fries are cooked, spread them out on a parchment-lined baking sheet. Give the vinaigrette another quick whisk, and drizzle the fries with half of the vinaigrette, and toss the wedges while they are hot so they absorb the dressing better.
  • Top your potato wedges with the creamy feta dressing, chopped tomatoes and olives, and drizzle with the remaining dressing and serve.

Notes

  • For the crispiest fries: You will want to give the air fryer basket a shake while the fries are cooking. This will allow the hot air to circulate around all of the fries and give them all an opportunity to crisp up. 
  • For the crispiest wedges: You will want to give the air fryer basket a shake while the wedges are cooking. This will allow the hot air to circulate around all of the wedges and give them all an opportunity to crisp up. 
  • For smaller air fryers: I recommend cooking the wedges in batches. Overcrowding the air fryer basket will not give you the best results. Because potatoes cook so quickly in the air fryer, it will not add much extra cooking time.
