Add the shiitake mushrooms and sauté for 2-3 mins. Then add the bell pepper and carrots.

Push vegetables aside to form a well in the centre of the pot. Add the curry and lemongrass paste to the centre, cooking for 2-3 minutes.

Add chicken broth, and the shredded chicken to the pot. Let it simmer over medium-low heat for 7-10 minutes.

Once the soup has simmered, add the coconut milk to the pot. Season with brown sugar, soy sauce, and lime juice and stir.
