This spicy sausage rigatoni al forno is a quick and easy weeknight baked pasta, full of flavour.
Spicy Italian sausage, rigatoni with a bite, and a creamy but spicy rosé sauce, make for a soon-to-be family favourite!
In a large pot, brown the Italian sausage, taken out of the casing, in olive oil. Break the sausage apart and crumble.
Add the tomato paste and spices to the sausage, onion and garlic mixture. Combine everything well, and cook the tomato paste through for 2-3 minutes.
Add the cooked rigatoni, and half of the pasta water to the pot. Toss well. Add more pasta water if you feel that the sauce is too thick.
Transfer the pasta to a baking dish, and top with torn bocconcini cheese. Broil for 5-10 minutes on LO, until the cheese is melted.
