These no-bake pumpkin cheesecake bars has the warm flavors we all know and love from a Biscoff cookie crust, and classic pumpkin spice.

Pulse Biscoff cookies until they resemble a rough crumb, and then start streaming the melted butter while continuing to pulse.

Transfer the cookie mixture into the pan. Press the crumb mixture into the bottom of the pan.

Add the cold heavy whipping cream to a stand mixer bowl, then whip until stiff peaks form. Set aside.

To the same stand mixer bowl, whip the softened cream cheese, sour cream and granulated and confectioner sugar.
