Spray the air fry basket with non-stick cooking spray. Then air fry red bell peppers for 20 minutes at 390°F.

Meanwhile, in a large pot, with 2 tablespoons of extra virgin olive oil. Sauté the onions and garlic until translucent and tender.

Add the canned tomatoes, roasted red peppers, chicken broth and spices to the pot, and simmer for 5 minutes.

Transfer the soup to a blender container, and add the feta cheese. Blend until smooth.
