Air Fryer Prime Rib Roast Beef

Pat the rib roast dry on both sides with a paper towel.

Dry the Meat

In a bowl or measuring cup, mix together the ingredients for the mustard rub. Using a silicone pastry brush, spread a liberal coat of the rub on one side of the roast.

Make the Rub

Place the roast in the air fryer basket, rub side down. Evenly spread the other side of the roast with another liberal coat of the rub.

Transfer to the Air Fryer

Air fry at 375°F until a meat thermometer reads between 130-134°F for medium-rare prime rib.

Cook

Remove from the air fryer, and transfer to a cutting board. Tent with foil, and let rest for 15-20 minutes before carving.
