Call me crazy, but I willingly enjoy brown rice. I genuinely believe one of the reasons why brown rice gets a negative reputation is because it takes a liiiitle more time than white rice, to cook. Now, my friends, what better way to fix that problem than to pull out your Instant Pot, and make this Instant Pot Mexican brown rice.
This rice makes the perfect base for burrito bowls and an even better stuffing for a classic burrito (yes carbs in carbs, there is nothing better than that). So I say, embrace the rice - it's brown rice after all! For Taco Tuesday, pull out this Instant Pot Mexican brown rice, and spice it up!
Fool-Proof Method of Making Instant Pot (or any) Rice
Have you ever tried to make rice, and it after cooking it you were left with a gummy, gloopy mess? There's no shame in admitting it, we have all been there. They key to rice that does not become clumpy and gummy is thoroughly rinsing your rice until the water runs clear.
This is what my rice looked like after a quick swish around some cold water. That cloudy water is all the extra starch that is on the outside of the grains of rice. To avoid gummy rice, rinse the rice until the water is relatively clear. Fear not, this may take a few cycles of rinsing and draining!
Pantry Ingredients
- Brown Rice
- Tomato Passata
- Chicken Bouillon
- Garlic Powder
- Your favourite hot sauce - I used this one
- Onion powder

- Prep Time: 5
- Cook Time: 25
- Total Time: 30 minutes
- Yield: 4 1x

Ingredients
- 1 cup Brown rice
- 1 ½ cups Water
- ¼ cup Tomato passata
- 1 tbsp Chicken bouillon base
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 2 tsp Habanero hot sauce
Instructions
- Rinse the rice: Rinse the rice until the water runs clear. Do not skip this step!
- Instant Pot: In your Instant Pot, add the rice, water, and all remaining ingredients. Combine well. Seal, and cook on HI pressure for 25 minutes.
- Release: Let the Instant Pot natural release for 5 minutes, then quick release. Fluff with a fork, and enjoy!
